Herb-Roasted Kosher Lamb Shoulder Chops


2 Kosher lamb shoulder chops
2 cloves garlic, minced
1/4 cup olive oil
1 tablespoon fresh rosemary, chopped
1 tablespoon fresh thyme, chopped
1 tablespoon fresh parsley, chopped
1/2 teaspoon salt
1/4 teaspoon black pepper
Lemon wedges, for serving


Preheat the oven to 350°F (180°C).
In a small bowl, mix together the garlic, olive oil, rosemary, thyme, parsley, salt, and black pepper.
Rub the mixture all over the lamb chops, making sure they are evenly coated.
Place the lamb chops in a baking dish and cover tightly with foil.
Bake in the preheated oven for about 1 hour and 30 minutes, or until the lamb is tender and cooked through.
Remove the foil and bake for another 10-15 minutes, or until the lamb is browned and crispy on top.
Let the lamb chops rest for a few minutes before serving.
Serve with lemon wedges on the side for squeezing over the lamb chops.
