Kosher Bison Meatballs
1 pound ground bison
1/2 cup seasoned bread crumbs (make sure they are kosher certified)
1/4 cup chopped fresh parsley
1/4 cup grated non dairy parmesan cheese
2 eggs, beaten
1 tablespoon dried oregano
1 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons olive oil
Preheat the oven to 375°F.
In a large bowl, combine the ground bison, bread crumbs, parsley, Non dairy Parmesan cheese, eggs, oregano, garlic powder, salt, and black pepper. Mix well.
Shape the mixture into 1-1/2 inch meatballs.
Heat the olive oil in a large skillet over medium-high heat. Add the meatballs and cook for 2-3 minutes on each side, until browned.
Transfer the meatballs to a baking dish and bake in the preheated oven for 15-20 minutes, until cooked through.
Serve the meatballs hot, garnished with additional parsley (if desired).
These meatballs can be served with your favorite sauce, such as marinara, pesto, or tzatziki. They also go well with a side of roasted vegetables or a salad for a complete meal. Enjoy!
