Instant Pot Bison Pasta

Ingredients:

1 pound ground bison
1 onion, diced
4 cloves garlic, minced
1 can (28 oz) diced tomatoes
1 can (6 oz) tomato paste
1 teaspoon dried basil
1 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon black pepper
2 cups water
12 oz kosher pasta, such as penne or fusilli
1/4 cup chopped fresh parsley
1/4 cup grated non dairy Parmesan cheese (optional)
Instructions:

Heat a large pot over medium-high heat. Add the bison and cook until browned, about 5 minutes.

Add the onion and garlic and cook for another 2-3 minutes, until softened.

Add the diced tomatoes, tomato paste, basil, oregano, salt, and pepper. Stir to combine.

Add the water and stir again.

Break the pasta in half and add it to the pot, making sure to submerge it in the liquid.

Reduce the heat to medium-low and cover the pot. Simmer for 10-12 minutes, stirring occasionally, until the pasta is cooked to your liking.

Once the pasta is cooked, remove the pot from heat and stir in the fresh parsley.

Serve the pasta hot, garnished with non dairy Parmesan cheese (if desired).
