Braised Beef Tendons with Daikon

Ingredients:

2 lbs beef finger meat, cut into bite-sized pieces
1 large daikon, peeled and cut into bite-sized pieces
4 cloves garlic, minced
2-inch piece ginger, sliced
2 scallions, cut into 2-inch pieces
2 star anise
2 cinnamon sticks
2 tablespoons soy sauce
1 tablespoon dark soy sauce
1 tablespoon oyster sauce
1 tablespoon Shaoxing wine or dry sherry
1 tablespoon brown sugar
Water
Salt and pepper to taste
Vegetable oil for frying

Instructions:

Rinse the beef finger meat and place it in a large pot. Cover with water and bring to a boil. Skim off any foam that rises to the surface, then reduce the heat and let simmer for about 10 minutes. Drain and rinse the beef finger meat.
Heat the vegetable oil in a wok or large skillet over high heat. Add the beef finger meat and stir-fry for a few minutes, until browned on all sides. Remove the beef finger meat from the wok and set aside.
Add the garlic, ginger, and scallions to the wok and stir-fry for a minute or so, until fragrant.
Add the beef finger meat back to the wok, along with the daikon, star anise, cinnamon sticks, soy sauce, dark soy sauce, oyster sauce, Shaoxing wine or dry sherry, and brown sugar.
Add enough water to cover the beef finger meat and daikon by about 1 inch.
Bring the mixture to a boil, then reduce the heat to low and let simmer for 2-3 hours, until the beef finger meat is tender and the daikon is cooked through.
Season with salt and pepper to taste.
Serve the braised beef tendons with daikon hot, over steamed rice.
