Beef chuck flanken is a type of beef cut that comes from the chuck primal area of the cow. It is also known as cross-cut beef short ribs. The beef chuck flanken cut is made by cutting across the bones of the chuck into thin slices, usually about 1/2 to 3/4 inches thick.
